Just trying to get caught up a bit as I haven’t posted for a few weeks. I found this recipe for low carb Spaghetti Squash Lasagna and can’t get enough of it. http://www.wickedstuffed.com/keto-recipes/low-carb-spaghetti-squash-lasagna-recipe-9-net/
It’s as satisfying and filling as what a plate of real lasagna would be…well almost!!! I’ve made it a couple of times now and have figured out a few tips for making it:
– It’s better to make smaller meatballs, somewhere between the size of a nickel and quarter.
– Add in more red pepper flakes than called for, to kick it up a notch in heat!
– For store bought sauce, Rao’s Homemade Four Cheese Sauce is the best I’ve been able to find for carb count. Tasty and has 3 net carbs per 1/2 cup. The recipe suggests Rozzano Marinara which has 2 net carbs per 1/2 cup but I haven’t seen that one in the stores yet.
